Anyone else a serious pasta lover, pasta fanatic even?! Well, I love pasta so much I could have it for breakfast lunch and dinner every day of the week no joke. Everytime Brock asks me what I want for dinner you wanna guess my answer… Well, one of my favorites is a simple mushroom fettuccine or chicken fettuccine alfredo but that recipe is coming next and very soon! This simple mushroom fettuccine is super easy to make and perfect for a girls night or a date night, your choice! Try it out and let me know what you think.
Simple Mushroom Fettuccine Recipe
Ingredients:
- 1/2 cup butter, divided
- 2 cloves fresh garlic
- 16 ounces fresh sliced mushrooms
- 1 cup heavy whipping cream
- 1 pound fettuccine
- 1/2 cup Parmesan cheese
- 1 cup reserved pasta water
- 1 teaspoon salt
- fresh ground black pepper
- parsley for topping
Instructions
-Clean the mushrooms. Add the garlic and mushrooms to a large skillet with 2 tablespoons of the butter. Sauté until the mushrooms are soft with deep brown color about 10-15 minutes.
-Add the cream and the rest of the butter. Simmer over low heat.
-Cook the fettuccine in a large pot following the directions on the package. Drain, reserving a little bit of the pasta water, and return to pan.
-Add mushroom sauce to the fettuccine in the pan. Toss with tongs to mix. Add Parmesan and up to 1 cup of reserved pasta water as needed to get the consistency right. Season with salt and pepper.
