I try not to be basic and order the pumpkin spice lattes from Starbucks… I actually drink my coffee black. But I’m pretty sure it’s a crime not to indulge in everything pumpkin spice during the fall! With that being said I wanted to share this delicious recipe of pumpkin spice pancakes with maple bourbon syrup.
The pumpkin spice pancakes are so light and fluffy and are topped with a sweet bourbon maple syrup. (Roasted pecans are a tasty, but optional touch.) You don’t have to be a whiskey fan to fall in love with these pumpkin spice pancakes with bourbon maple syrup though…it’s the perfect breakfast for anyone to warm you up on those crisp fall mornings 🙂
Pumpkin Spice Pancakes with Bourbon Maple Syrup Recipe
Ingredients:
- ¾ cup pumpkin puree
- 1¼ cup buttermilk
- 2 tbsp. butter, melted
- 1 egg
- 3 tbsp. brown sugar
- ¾ tsp. vanilla extract
- 1¼ cup all-purpose
- 1 tsp. baking powder
- 1 tsp. baking soda
- ¼ tsp. salt
- 1½ tsp. cinnamon
- 1 tsp. pumpkin pie spice
Bourbon Maple Syrup:
- 1 cup water
- 1 and â…“ cups sugar
- â…” cup brown sugar
- 1 Tbsp. whiskey
- 1 tsp. maple extract
- â…“ cup chopped pecans
Instructions:
-To make the syrup, in a small saucepan, toast the chopped pecans until fragrant, taking care not to burn. whisk all ingredients together and bring to a simmer over medium-high heat. Whisk occasionally and simmer for 20-25 minutes until syrup has thickened. While this is cooking start on the pancakes.
-In a mixing bowl, add the pumpkin puree, buttermilk, butter, egg, brown sugar and vanilla extract, whisk until combined.
-In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
-Make a small nest or well in the center of the dry ingredients and pour the wet ingredients in. Using a large whisk or spatula, stir together until well combined.
-Place a skillet over medium heat and melt a small amount of butter in the pan. Pour â…“ c. of batter into the pan and allow the pancake to cook for 2 minutes, then flip and continue cooking for an additional 2 minutes. Repeat with the remaining batter, buttering the pan between each batch.
-Pour your syrup and enjoy!

Oh my yum! I cannot even imagine how delicious this must be! I made some chocolate bourbon butter pecan cupcakes last year and they were to die for. The maple bourbon made me think of them!

You caught my attention with the bourbon maple syrup! Wow, it sounds amazing and perfect for fall. I don’t get on the pumpkin spice wagon often but would love to try these pancakes with a hefty serving of that amazing maple syrup over the tops.
