Pumpkin Hand Pies

Howdy folks!! In case you didn’t know this already PIE LOVE FALL! I also love pumpkin pie, but instead of constantly having to make a whole pie and feel guilty after eating it all by myself I started making these pumpkin hand pies. They are amazing and you definitely don’t feel as bad eating a few of these because they are small…at least that’s what I keep telling myself. If you don’t want to wash extra dessert plates this thanksgiving you should definitely give these a try. This recipe is super tasty, but if you want to make it easier on yourself the pre-made pillsbury pie dough is just as good for these as making your dough from scratch. This is the same recipe as my Blueberry Hand Pies, just a different filling. You can fill these with pretty much any flavor, but for fall I love me some pumpkin!

Pumpkin Hand Pies Recipe:

Ingredients:

for the crust:

  • 1¼ cups all purpose flour
  • ¼ teaspoon salt
  • ⅓ cup shortening
  • 4 to 5 tablespoons cold water
for the filling:
  • 1 cup pumpkin puree
  • 3/8 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon heavy cream
  • 1 large egg
  • 1/8 teaspoon cinnamon

Instructions:

-In a medium bowl stir together flour and salt. With a pastry blender cut in shortening until pea sized.

-Sprinkle water in one tablespoon at a time tossing with fork. Mix till all flour is moistened.

-Form into a ball and roll out on floured surface. Turn and flour dough a few times then roll out until you reach desired thickness. Use a circle cookie cutter to cut out 24 circles. Place half dough circles on parchment paper.

-Preheat oven to 350F. To make the filling, mix pumpkin, brown sugar, spices, and cream in a medium bowl.

-Add in a tablespoon pie filling to half of the dough circles, then place the remaining circles on top. Seal the edges by pressing with your fingers. Then press a fork around the edges. Use a pie stamp to add decoration or a cookie stamp to personalize, if desired.

-Whisk one egg and cinnamon in a small bowl and brush on the tops of the dough.

-Bake for 20 minutes or until golden brown and enjoy!
