Peanut Butter Marshmallow Chocolate Chip Cookie

October 11, 2017

I normally am the type to just follow a recipe and make delicious things, but when it comes to chocolate and peanut butter I LOVE experimenting and trying stuff out, because let’s be honest anyway you combine them is going to be phenomenal. After some trial and error I found my new favorite cookie! It is a peanut butter marshmallow chocolate chip cookie and I can’t get enough of it. It’s so easy to make that I have found myself baking them 2-3 times a week lately! Oops.

If you don’t think this ooey gooey chewy peanut butter marshmallow chocolate chip cookie is the best thing since sliced bread then you can just get the heck out of here. Just kidding! Try out this recipe of peanut butter and chocolate goodness below and let me know what you guys think. Unless you hate them, because then you’re just wrong.

Peanut Butter Marshmallow Chocolate Chip Cookie Recipe

Ingredients:

  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup peanut butter
  • 2 eggs, room temperature
  • 2 tsp vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows
  • 2 cup semi-sweet chocolate chips

Instructions:

-Preheat oven to 350 degrees and prepare a baking sheet with parchment paper.

-In an electric mixer fitted with a paddle attachment, cream butter, sugar, brown sugar, and peanut butter. Mix until light and fluffy.

-Add eggs and vanilla.

-Add in flour, salt, cream of tartar and baking soda, a little at a time.

-Fold in chocolate chips and marshmallows.

-Place small round balls onto cookie sheet and bake for about 10 minutes.

-Remove cookies from oven and immediately add a couple more marshmallows if desired. Allow cookies to cool on the baking sheet.

Makes about 2 dozen cookies

I hope you guys enjoy these as much as I do. P.S. they also taste super good frozen with a warm beverage like this peppermint spiked hot cocoa 🙂
