Growing up Little Debbie’s oatmeal cream pies were always some of my favorites. Unlike the originals, these soft and chewy oatmeal cookies are sandwiched together with yummy cream cheese frosting to create the perfect dessert that truly melts in your mouth. Forget about Little Debbie, these fresh, homemade Oatmeal Cream Pies are the way to go!

Oatmeal Cream Pies Recipe

Ingredients
For the Cookies:

1 cup salted butter, softened
1 cup packed brown sugar
1 cup sugar
3 large eggs, room temp.
1 teaspoon vanilla extract
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 3/4 cups old-fashioned oats

For the Cream Cheese Frosting:

1/2 cup salted butter, softened
1 (8 oz) package cream cheese, softened
4 cups powdered sugar
1 teaspoon vanilla extract

Instructions
For the Cookies:

-Preheat oven to 350°F and line baking sheets with parchment paper.
-Cream butter, brown sugar, and sugar together until light and fluffy.
-Add eggs one at a time, beating after each addition. Then add vanilla and beat until combined.
-Add flour, baking soda, cinnamon and salt, and beat on low speed until just combined. Stir in oats.
-Scoop dough using a medium sized cookie scoop and place 2-3 inches apart on the baking sheet. Bake for 10-12 minutes.

For the Cream Cheese Frosting:

-Beat softened butter and cream cheese until light and fluffy.
-Add confectioners sugar one cup at a time, beating after each addition. Add vanilla and beat until combined.
-To assemble the cookies, pipe frosting (using a pastry bag) on the flat side of half of the cookies and press the remaining cookies on top of each one.
