Apologies for being MIA on here but life has been a little crazy lately. Work has been so busy in a good way. I am learning so much and taking on new roles that when I finally get home I am too exhausted to be creative or even think about baking. I did, however, find a little time to make myself some mini double chocolate chip bundt cakes. They are so moist and satisfying you can eat ten of em and not even realize it…They’d go great with a little frosting as well but I love them plain with a little powdered sugar sprinkled on top. I hope you guys enjoy this rich chocolatey recipe as much as I do. I swear I will also be posting a lot more content soon, once I work on a little time management!
Mini Double Chocolate Chip Bundt Cakes Recipe
Ingredients:
- 4 eggs
- ¾ cup sour cream
- ½ cup oil
- ½ cup water
- 1 small package instant chocolate pudding
- 1 chocolate cake mix
- 1 cup semi-sweet chocolate chips
Instructions:
-Beat the eggs and sour cream together until well combined.
-Add all the other ingredients and mix well. The batter will be thick.
-Pour into a greased mini bundt cake pan and bake at 350 degrees for 20-25 minutes.
-Sprinkle powdered sugar and enjoy!

yum! I love bundt cake! And I’m with you, I love frosting, but I kinda love powdered sugar on cake more! I cannot wait to try these! Now to bed bath and beyond for mini-molds!
