Maple Pecan Roasted Oats

It’s my last day in Cleveland visiting my sister, brother-in-law and niece and it’s pouring rain! This chilly weather makes me want to bake and cozy up by the fire. Forget about pumpkin spice, something about this rain makes me want maple pecan flavored everything, including maple pecan roasted oats! This recipe for two is so easy to make and it’s the perfect fall breakfast! 

Maple Pecan Roasted Oats Recipe

Ingredients:
¼ cup pecans
1½ teaspoons maple syrup + 1 teaspoon
¼ teaspoon butter
A pinch of sea salt
1 cup rolled oats
½ teaspoon cinnamon + more to sprinkle

Instructions:
-Preheat your oven to 425 degrees. Line a small baking dish with parchment paper and add the pecans to the dish. Toast the pecans halves in the oven for 5 minutes. When the pecans are lightly browned, take them out and mix them with the butter, sea salt, and 11/2 teaspoons of maple syrup. Put them back in the oven for 2-3 minutes.
-While the pecans are in the oven, begin cooking the oatmeal. In a small pot bring 3 cups of milk or water to a boil then add in oats. Let it cook, stirring occasionally until it thickens, about 4-6 minutes. Remove the pot from the heat and stir in the cinnamon, remaining maple syrup, and roasted pecans. Sprinkle extra cinnamon on top and enjoy!

    I love oatmeal for breakfast! I usually top mine with milk powder (I’m weird).. but this looks yum too! I’ll give this a try!

    God, it looks amazing! I love putting cinnamon on my oatmeal ( it’s kind of my trick haha) , but I think I+m upragding it to pecan nuts after sawing this!
