This tasty lemon poppy seed loaf is so easy to make. The lemon loaf is so moist, you’ll have everyone going back for a second slice!
In case you guys didn’t know, I friggin love poppy seeds! I’ve been adding them to everything and trying out new recipes with them. I have had so many poppy seeds lately that I feel a little bit like Elaine from this episode of Seinfeld…
Well anyways I will be sharing a bunch of poppy seed recipes with you coming soon. I wanted to start with this simple, yet delicious glazed lemon poppy seed loaf. It is seriously so good you guys! Together, Pudge (my dog) and I probably had 6 slices…and I’m not saying who ate more.
Glazed Lemon Poppy Seed Loaf Recipe:
For the lemon poppy seed loaf:
- 1 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 6 tablespoons sour cream
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 2 tablespoons lemon zest
- 1 1/2 tablespoon poppy seeds
For the lemon glaze:
- 1 cup confectioners sugar
- 4 teaspoons fresh lemon juice
- 1 tablespoon heavy cream
- 1 teaspoon salted butter, melted
Instructions:
-Preheat the oven to 350 F and grease a 8.5″ x 4.5″ loaf pan with non-stick cooking spray. Set aside.
-In a medium bowl, whisk together the flour, salt, baking powder, and baking soda. In a separate small bowl, stir together the sour cream, lemon juice, and vanilla.
-In another large bowl, mix the butter and sugar on medium speed until smooth. Add the eggs one at a time, beating well after each addition. Beat in the lemon zest and poppy seeds.
-On medium speed, mix the other two bowls by alternating. Add the flour mixture in 3 separate additions and the sour cream mixture in 2 separate additions, beginning and ending with the flour mixture. Blend after each addition until just combined.
-Next, pour your batter into the loaf pan and then smooth the tops. Bake the loaf for 40-45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely before removing from the pan.
-For the glaze, whisk together all the ingredients in a small bowl until smooth. Spread the glaze on the top of the cooled lemon poppy seed loaf and allow to sit for about 20 minutes to set. (I couldn’t wait that long though…)
