The New Year is already flying by and resolutions are in full swing. I know a major resolution on lots a lists is to eat healthier, heck it’s something I even want to accomplish! I have a major sweet tooth so just starting to eat healthily and cutting out sweets cold turkey doesn’t quite work for me. I have to ease my way into it and still let myself have what I crave. I love me some donuts but instead of going with the usual unhealthy donut that makes you feel sluggish I made a healthier version that actually gives you some energy in the morning!
Healthy Blueberry Oatmeal Donuts Recipe
Ingredients
For the donuts
- 1/3 cup (75.6 g) melted and cooled coconut oil
- 2/3 cup (150 g) brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups (192 g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 Tbsp cinnamon
- 1/2 cup (125 ml) buttermilk
- ¾ cup (96 g) whole oats
For the frosting
- 1/2 cup butter room temperature
- 2 1/2 cups powdered sugar
- 1 1/2 Tbsp 2% milk
- 1 1/2 tsp vanilla extract
- 1/2-2/3 cup chopped fresh blueberries
Instructions
-Preheat oven to 350 degrees. Grease donut pan and set aside.
-Combine coconut oil, brown sugar, vanilla extract, and eggs until thoroughly combined.
-Using a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
-Slowly add flour mixture and buttermilk to the wet mixture until just combined.
-With a spatula fold in whole oats.
-Spoon batter into donut pan, filling just below the edge.
-Bake for 15 minutes or until toothpick comes out clean.
-Allow doughnuts to cool for 10 minutes before placing onto a wire rack.
-Let cool completely before applying frosting.
-To make your frosting, whip room temp butter until fluffy (2-3 min). Add milk, vanilla, and powdered sugar. Slowly add blueberries while mixing until desired blue colored is reached.
-Dip donuts into the frosting and enjoy!
