I’m not normally the type of person to make New Year’s resolutions. When there is something I want to improve on I want to improve on it right away. I like to work on myself all throughout the year to become the best person I can be today and not tomorrow. That being said, one thing I want to consciously work on is to be more grateful. I truly feel like the more you express gratitude and the more positive thoughts and energy you put out brings good things back in your direction. This is not to say that you should only express gratitude to get a return from it. I just firmly believe that every day is a blessing and we should remember to treat it that way and be thankful for each and every one. This is something I really worked on in 2018 and it was the best year of my life so far. I already know that 2019 is going to be amazing. Sure there will be ups and downs but so long as I am grateful for the highs and the lessons I learn from the lows, I truly believe God will be good.

So I’ll start here and say that one thing I am so grateful for is cookies! And not just any cookies but these white chocolate peppermint cookies. Christmas may be over but pick yourself up some candy canes and get to baking! I promise you’ll be grateful for them too 🙂 or try these chocolate peppermint donuts!

White Chocolate Peppermint Cookies Recipe

Ingredients

  • 1 1/4 cup all-purpose flour
  • 1/2 cup unsalted butter room temp
  • 3/4 cup white chocolate chips
  • 1/2 cup crushed candy canes plus more for dipping
  • 1 pinch salt
  • 1/4 tsp baking soda
  • 1 pinch baking powder
  • 1 egg room temp
  • 1/2 cup sugar plus 1 tbsp
  • 1/2 tsp vanilla extract
  • 1/4 tsp peppermint oil

Instructions

-Whisk together the flour, baking soda, baking powder and salt, set aside.
-In a separate bowl, beat the butter and sugar until light and fluffy.
-Add the egg, then the vanilla and peppermint oil.
-Slowly add the flour mixture until just incorporated.
-Add the white chocolate chips and crushed candy canes.
-Use a medium size cookie scoop and place the cookie dough on a cookie sheet lined with parchment paper.
-Dip each ball of cookie dough into crushed candy canes.
-Chill on baking sheet for 10 minutes in the fridge. Bake at 350 degrees for about 6 to 7 minutes.
-Allow them to cool on cookie sheet then move them to wire racks. Enjoy!

    Love that you want to consciously make an effort to be more grateful! I think we often forget to say thank you even or especially for small acts give toward us. It takes so little yet can mean so much to others if we just say thank you or show them that we really appreciate them.
    As for these white chocolate peppermint cookies…they look very yummy and I am not even a peppermint or white chocolate fan. But my aunt and mother are and they look easy enough that even I could make them and I am an awful baker! Great recipe, definitely going to check out the chocolate donut recipe too!
