Cinnamon Donut Loaf

Why just have a cinnamon donut when you can have a whole cinnamon donut loaf?! Seriously though, this loaf is so delicious it’s impossible to just have one slice.

The cinnamon donut loaf is actually pretty simple to make, you just need to be prepared to roll up your sleeves and get a little messy during the final steps of this recipe. This loaf is dense, moist and perfect during those crisp fall nights that are inching closer. I also have the leftovers the next morning with a cup of coffee and it alway tastes just as good, if not better the next day! Check out the recipe below and let me know what you guys think.

Cinnamon Donut Loaf Recipe

Ingredients:

For the loaf

  • 1/4 cup softened butter
  • 1/4 cup canola oil
  • 1 cup sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup buttermilk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon molasses

For the outer coating

  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions:

-Preheat oven to 350 degrees. Grease loaf pan with non-stick cooking spray and set aside.

-In large bowl, mix oil, butter and sugar until well combined. Stir in eggs and vanilla until smooth. Gently stir in dry ingredients and buttermilk until batter has just formed. Stir in cinnamon and molasses.

-Pour batter into the loaf pan. Bake 45-50 minutes or until toothpick comes out with a few moist crumbs.

-While the loaf is baking, get the outer coating ready. Pour melted butter into a shallow dish. Stir sugar, brown sugar and cinnamon together in a separate shallow dish.

-Cool the loaf for 10 minutes before loosening edges and removing loaf from pan. The loaf should be very warm, but cool enough to handle with your hands.

-Dip each side of loaf into melted butter until fully coated. Transfer buttery loaf to the cinnamon-sugar mixture and press into the sides and top until fully coated.

-Slice into pieces and serve warm or at room temperature, preferably with coffee.
