Ever since I can remember cherry poptarts have always been one of my favorite snacks! I wouldn’t just have them as a quick breakfast when we were running late, I would have them all the time. It just so happened to be the only sweet treat in the house that my dad wouldn’t eat. He’s always been known to vacuum up anything and everything between the hours of midnight and 4 am. For some reason, my cherry poptarts were always safe. I used to rip off the crust and give it to my dog piece by piece so we could savor it together.
I decided to make my own batch for Pudge and I to try out and let me tell ya these cherry poptarts were even better than I remember! They are quick and easy to make and they make the perfect breakfast treat! If you guys are feeling nostalgic or you just have a soft spot for poptarts you have to try out this delicious recipe. You’ll be making them all the time!
Cherry Poptarts Recipe
Ingredients:
For the dough:
- 4 cups flour
- 3 tablespoons granulated sugar
- 2 teaspoons salt
- 1 ½ cup vegetable shortening
- 1 egg
- ½ cup cold water
For the egg wash and filling:
- 1 egg
- 1 tablespoon water
- 1 jar of cherry jam
For the icing:
- 1 cup powdered sugar
- 3 tablespoons milk
- ¼ teaspoon vanilla
- pink pastel food coloring
- pastel rainbow sprinkles
Instructions:
-In a large bowl blend the flour, sugar, and salt. Add the shortening and blend just until the mix is crumbly. Add the egg and cold water and mix until just blended.
-Roll the dough into a ball and flatten. Wrap in plastic wrap and refrigerate for about an hour.
-Once the dough is chilled, roll it out on a lightly floured surface until about 1/4 inch thick. Preheat your oven to 375 degrees. Cut small rectangles with cookie cutter or knife and place them onto a parchment lined baking sheet.
-For egg wash, whisk the egg and water together until foamy. Brush half of the dough on your sheet with the egg wash.
-Scoop 1 tablespoon of cherry jam onto the tops of each egg-wash-brushed rectangle. Take the dough without egg wash and place on top of the dough with cherry on them. Seal the edges together with your fingers. Then with a fork, crimp the edges together along the sides of each poptart.
-Bake the pop tarts for 15 minutes until the tops are golden brown.
-In a small bowl, mix together the powdered sugar, milk, and vanilla. Add in more milk if needed and add pastel pink food coloring.
-Pour glaze onto poptarts, but be careful not to pour too much as it will spread on its own and top with pastel sprinkles!
