Fourth of July Funfetti Cookie Sandwich

Last year for the fourth I made chocolate chip cookie ice cream sandwiches and as delicious as they were I wanted to make something a little more festive this year! What could be more festive than funfetti cookies?

These aren’t just cookies though, it’s a buttercream fourth of July funfetti cookie sandwich. For real! Sprinkles are becoming my new favorite thing to add to desserts lately. These cookies are perfect for any celebration, birthdays, and holidays. You just have to change up the color of the sprinkles, easy peasy! These Cookies are soft and chewy and delicious too. The sprinkles are just a bonus, really.

I use a bit of powdered sugar in the recipe, which adds to the chewiness of the cookie. I also like to underbake the cookies so they stay soft in the center, as I do with almost all my cookies. Bake them just until they begin to turn golden brown around the edges. Then sandwich them together with some buttercream frosting and you have yourself a little fireworks party in your mouth!

Fourth of July Funfetti Cookie Sandwich Recipe

Ingredients

For the cookies:

  •  2 and ⅛ cups all-purpose flour
  •  ½ teaspoon baking soda
  •  ½ teaspoon fine salt
  •  1 cup (2 sticks) unsalted butter, softened
  •  ⅔ cup granulated sugar
  •  ¾ cup powdered sugar
  •  1 large egg
  •  1 teaspoon vanilla extract
  •  1/2 cup sprinkles

For the buttercream:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 1/2 teaspoon vanilla
  • 2 tablespoons milk

Instructions

-Preheat oven to 350 F. Line 2 baking sheets with parchment paper. Set aside.
-In a medium bowl, sift together flour, baking soda, and salt. Set aside.
-In a large bowl, beat butter, granulated sugar, and powdered sugar on medium speed for 3 minutes. Beat in the egg and vanilla extract until just combined.
-Add flour mixture and beat just until combined. Mix in sprinkles. Don’t overmix.
-Shape dough into balls and place on the cookie sheets, spacing them 2-inches apart. Bake for 10-12 minutes until cookies just begin to brown at the edges, but the center is still soft (you don’t want to overbake them). Allow cookies to cool completely.
-For the buttercream: mix all ingredients together and use a piping bag or small rubber spatula to spread frosting on the backside of half the cookies. Then sandwich the cookies with the other half and add sprinkles around the edges.
