Pumpkin Soup

Currently in Indiana and it is COLD! This chilly weather has me seriously craving a bowl of hot soup. What better one to make than this classic, pumpkin soup that is super easy to make. It’s so thick and rich. You’ll be making this over and over again this fall season.

It’s perfect for dinner parties or just an easy family dinner because it’s incredibly easy – just drop the pumpkin, onion, garlic, broth, and water into a pot, and boil rapidly for 15 minutes, then mix until smooth. Add salt and pepper to taste then add your cream and voila you got yourself some simple but oh so tasty pumpkin soup!

Ingredients

  • 2.4 lb pumpkin 
  • 1 onion, sliced
  • 2 garlic cloves, whole
  • 3 cups chicken broth
  • 1 cup water
  • Salt and pepper
Finishes:
  • 1/2 cup cream, or half and half

Ingredients

Cut the pumpkin into 2.5″ slices. Cute the skin off and scrape seeds out. Cut into smaller chunks.

Place the pumpkin, onion, garlic, broth, and water in a large potyour liquid won’t cover the pumpkin completely. Bring to a boil, uncovered, then reduce heat and let simmer until pumpkin is tender.

-Remove from heat and use a stick blender to blend until smooth. If you don’t have a stick blender, use a mixer.

-Season with salt and pepper, stir in cream.

Spoon the soup into bowls, drizzle over a bit more cream and sprinkle with pepper and pumpkin seeds if desired
